"Just Sweet Enough"
Chocolate, a universal guilty pleasure, has taken a turn for the virtuous. Vere (veregoods.com), a new artisanal line of dark chocolate, forgoes fattening and vitamin-depleting sucrose (aka sugar) and replaces it with all-natural fructose. Vere’s sweetening doesn’t spike blood sugar levels or signal your body to store fat. The goal of the haute chocolate line, explains founder Kathy Moskal, is “to get back to what originally gave chocolate it’s ‘food of the gods’ name and make it healthy and sensual.” Turns out it’s all in the beans. Made from Arriba cocoa, an heirloom variety from Ecuador with a rich taste that requires little sweetening, Vere has twice the antioxidants of standard dark chocolate. The line of elegant confections features brownies, chocolate bars and an assortment of truffles including a surprisingly decadent soy-based vegan creation.
